“Many men” is our favorite discovery of the trip. I would eat this every meal, every day if I could!
Ingredients:
2 tbsp olive oil
1/2 red pepper
1/2 green pepper
1 large onion
1 fresh chilli
3 large tomatoes
4 eggs
Salt & pepper to taste
- Chop the onions and peppers into large pieces (approximately 1 inch squares), and finely chop the fresh chilli (removing the seeds)
- Heat the oil in a large frying pan, and fry the onions, peppers, and chilli until softened
- Chop the tomatoes finely, and add to the pan. Simmer for a few minutes to reduce the liquid from the tomatoes
- Break the eggs into a bowl, and break up the yolks with a fork
- Add the eggs to the pan, and stir constantly for 2-3 minutes, until the eggs are cooked and scrambled (Don’t make them dry or crumbly)
- Season with salt and pepper to taste
Hmmm, sounds lovely – we loved food in Turkey; so much fish and lovely ways of cooking vegetables!
